Mix the buttermilk and hot sauce in a bowl. Submerge the chicken breast, cover, and refrigerate for at least 4 hours (overnight is best).

In a shallow dish, combine the flour, garlic powder, onion powder, cayenne, paprika, black pepper, white pepper, and salt.

Remove chicken from the buttermilk marinade. Dip into the flour mixture, then back into the buttermilk, then into the flour mixture again for a double-breaded coating. Press firmly to adhere.

Heat vegetable oil in a deep pot or fryer to 350F (175C). Carefully lower the chicken into the oil and fry for 6 to 7 minutes until deep golden brown and the internal temperature reaches 74C (165F).
