- •1 soft hamburger bun
- •1 leaf iceberg lettuce

- •2 tablespoons Thousand Island dressing (or mix 1 tablespoon mayo, 1 tablespoon ketchup, 1 teaspoon sweet relish)

Mix together the mayo, ketchup, and sweet relish to make the spread. Set aside.

Form the beef into two thin patties about 10cm (4 inches) across. Season both sides with salt and pepper.

Heat a cast iron skillet or flat griddle over high heat. Cook the patties for 2 to 3 minutes per side until a brown crust forms and the internal temperature reaches 71C (160F). Place a slice of cheese on each patty during the last minute of cooking and cover to melt.
